Spanish Paella

My go to for a gathering. The most difficult part of Paella is the shopping… from there out it’s a breeze to assemble. Unless you want it to have perfectly cooked rice with a crispy socarrat… I’ve yet to master that!  

I loosely follow this recipe, but I do a quick sear on the seafood first, set it aside, and add it later... I like seared things!
